Pork Adobo

Pork Adobo is succulent pork butt cooked in a tangy, savory sauce made with soy sauce, vinegar and garlic. This cooking method known as adobo was developed by early Filipinos who needed to preserve their food from the tropical heat by using the acid of vinegar. When Spanish colonizers encountered the dish, which was traditionally cooked in clay pots, they started calling it adobo which is Spanish for marinade. This flavor-rich stew is an iconic dish of the Philippines.
