Ginisang Ampalaya is a delicious dish of stir-fried bitter melon sautéed with onion, garlic, tomato and ground pork. Beaten whole eggs are added for a richer flavor. Ginisa in the Philippines is known as the Filipino Trinity of cooking. It is comprised of chopped onions, garlic and tomatoes. It serves as the base for so many Filipino dishes such as the flavor-rich Ginisang Ampalaya.
