Atcharang Labong

Atcharang Labong is pickled bamboo shoots mixed with slices of carrots, bell pepper, ginger, onion, garlic and other veggies. The word atchara or pickle came from the word acar of Indonesia, Malaysia and Brunei, all neighboring countries of the Philippines. On the other hand, the method of pickling originated in India thousands of years ago. In the Philippines, the sour, crunchy concoction is always served as a side dish to grilled or fried food.
