Atcharang Ampalaya is pickled bitter melon and served as a mouth-watering side to any fried dish. The word atchara or pickle came from the word acar of Indonesia, Malaysia and Brunei, all neighboring countries of the Philippines. On the other hand, the method of pickling originated in India thousands of years ago.
